This cod roe is made from pollock roe caught in Hokkaido. Only about 3.5% of the domestic supply of Suketoko is produced in Japan, and it is characterized by its firm, chewy texture. The secret ingredient is makonbu (Japanese kelp) from Minami-Kayabe in Hokkaido, which gives it a delicious, deep flavor. A unique blend of flavorful chili peppers is used to create a superb mentaiko.
