This cod roe is made from pollock roe caught in Hokkaido. Only about 3.5% of the domestic supply of Suketoko is produced in Japan, and it is characterized by its firm, chewy texture. The secret ingredient is makonbu (Japanese kelp) from Minami-Kayabe in Hokkaido, which gives it a delicious, deep flavor. Each fish roe is carefully and painstakingly made by artisans who are intimately familar with fish roe. They are highly appreciated when given as gifts.
